Black Bird

A Syrah wine with black and red hues, yet without a sensation of over-ripeness or excessive power.
The vines are grown in the Wadi vineyard in Tzvion.
A vineyard with low yields, approximately 600 kg per dunam.
The winter is cold with many chilling hours. The summer is characterized by large temperature differences between day and night.
Cool nights allow the grapes to ripen slowly and maintain vibrancy, freshness, and aromatic complexity.

The clusters undergo destemming and gentle crushing. Fermentation is wild, and contact with the skins does not last more than two weeks.
After fermentation is complete, the wine is aged in old barrels for 12 months, spends another 6 months in stainless steel tanks, and is then bottled.

This is a restrained wine with wonderful balance and a deep, concentrated mid-palate.
